Overnight Oats – Pumpkin Edition

If you are like me, you don’t have time to cook breakfast in the morning! Being a coach requires an early alarm which makes it more challenging to find time to cook a big breakfast. That’s why I’m in love with overnight oats!

You can play around with different flavors, toppings, and ingredients to find a delicious recipe that works for you. As Pumpkin Spice Everything season is in full swing, I decided to put together a tasty and quick pumpkin oats breakfast.

To prepare, grab the following ingredients:

  • 1 cup of oats
  • 2 cups of plain yogurt (I used dairy free)
  • 1/2 can of pumpkin
  • 1 cup of milk (I used almond milk)
  • 2 TB of chia seeds
  • 1.5 TB of flax seeds
  • 2 TB of maple syrup (optional)

Stir the ingredients together until all is mixed. Pour into 2-3 separate jars and chill for the night. Tomorrow when you are hungry, simply grab it out of the refrigerator and top it with granola or chopped pecans!
